Cognac is crafted through a detailed and strictly controlled production process. It starts with fermenting specific white grapes, Ugni Blanc, into a low-alcohol wine, which is then distilled twice to create a clear, potent liquid called eau-de-vie. This eau-de-vie matures in French oak barrels for several years, developing its distinctive flavours. The final touch involves blending different batches to achieve the desired taste before bottling. Regulated by strict rules in the Cognac region, this method results in a refined spirit celebrated for its exquisite character.
There are a few main groups that cognacs fall into: As of 2018, VS (very special) must be at least two years old, VSOP (very superior old pale) must be at least four years old, and XO (extra-old) must be at least ten years old. Another thing to keep in mind is that these age limits only apply to the youngest cognac that was used in the blend. There is also XXO, (extra extra old) reserved for cognacs that have been aged for 14 years or longer.
