How is cognac made?

Regulated by strict rules in the Cognac region of France, the liquor is crafted by distilling Ugni Blanc wine into a brandy that is then aged in French oak barrels. Cognac ageing scale

When dealing with cognac, the ageing scale is vital in finding a liquor that fits your flavour wishes and expectations. As of 2018, VS cognac (very special) must be at least two years old, VSOP cognac (very superior old pale) must be at least four years old, and XO (extra-old) must be at least ten years old.

Keep in mind that these age limits only apply to the youngest cognac that was used in the blend. XXO (extra extra old) is reserved for cognacs that have been aged for 14 years or longer.
