What is rum alcohol?
Rum alcohol, also known as rum distillate or rum base, refers to the distilled spirit that is produced through the fermentation and distillation of sugarcane byproducts, such as molasses or sugarcane juice. The process involves fermenting the sugarcane-derived material to create a crude alcohol, which is then distilled to achieve the desired alcohol content and purity.
Rum is typically colourless and has a high alcohol content, from 40% to 75% ABV. It serves as the foundational ingredient for both aged and unaged rums. Rum usually undergoes additional processes like ageing in oak barrels to develop flavours and colours, creating the distinct characteristics associated with various types of rum.
Types of rum
White / Light rum
White rum, also known as light rum, is typically clear or slightly pale in colour. It is usually aged for a short period, if at all, in oak barrels, which imparts a mild flavour profile. White rum is often used in cocktails due to its neutral taste and versatility, for example in drinks like Mojitos and Piña Coladas.
Gold / Amber rum
Gold rum, also known as amber rum, is aged longer than white rum, giving it a richer colour and more complex flavour. It often takes on subtle notes of vanilla, caramel, and spices from the ageing process. Gold rum is frequently used in cocktails that benefit from its slightly enhanced flavour, such as Mai Tais and Rum Punches.
Dark / Black rum
Dark rum, sometimes referred to as black rum, undergoes a longer ageing process than gold rum. It has a deep, rich colour and a strong, full-bodied flavour profile with pronounced notes of molasses, spices, and sometimes a hint of smokiness. Dark rum is often sipped neat or used in cocktails that require a more intense flavour, like Dark 'n' Stormy and Planter's Punch.
Aged / Premium rum
Aged or premium rums are often considered the pinnacle of rum craftsmanship. They are aged for an extended period in oak barrels, which impart deep and complex flavours. Overproof rum

How is rum made?
Rum production combines age-old craft with regional variation. While ingredients and techniques may differ, most rums follow a similar path from sugarcane to bottle.
Sugarcane origins
Rum starts with sugarcane by-products, usually molasses, or sometimes juice. Molasses-based rums tend to be rich and spicy, while juice-based rums are lighter and more herbal.
Fermentation
Yeast is added to convert sugar into alcohol. The speed and style of fermentation shape the flavour, from clean and light to fruity.
Distillation
The fermented liquid is distilled in either pot stills for bold, complex rum or column stills for smooth, clean spirits ideal for blending.
Ageing
Many rums are aged in oak barrels, which add depth, colour, and notes of vanilla, spice, and dried fruit. Tropical ageing speeds up this process, while unaged rums may still rest briefly or be filtered for clarity.
