How is Armagnac made?
Armagnac production involves several key stages. Following the harvest, the grapes undergo pressing to extract juice for white wine. This wine ferments for approximately three weeks, resulting in a high-acidity, low-alcohol solution. Subsequently, the wine undergoes column distillation during the winter, creating eaux-de-vie, a brandy that will mature into Armagnac.
The aging process occurs in oak barrels, initially in new ones and later in used ones, to prevent an excessive oak flavour. Armagnac matures for at least a year, depending on its classification. Finally, blending takes place, combining eaux-de-vies from different regions to craft Armagnac, with the youngest brandy dictating its classification before bottling.
Differences between Armagnac and Cognac
Armagnac and cognac, both French brandies, have some key differences:
Armagnac gets its unique taste from being distilled once in stainless steel columns, giving it a brighter flavour. On the other hand, cognac is distilled twice in pot stills, resulting in a smoother texture.
Armagnac can be aged in barrels made from different types of oak, while Cognac is aged in barrels made from Limousin oak and Troncais oak.
Armagnac also has more alcohol, around 52–60%, compared to Cognac's 40–47%. It is these key differences that give Armagnac its distinct flavour and character, which sets it apart from Cognac in its own right.
