What is fusel oil?

Fusel oil is a by-product obtained from biomass such as sugarcane, beets, grains, potatoes, and wheat. Also known as fusel alcohol, it is a mix of several higher alcohols: Next to 60-70% isoamyl alcohol, fusel oil consists of various other chemicals such as pyrazine, isobutyl alcohols (isobutyl alcohol), and traces of other components.

Uses of fusel oil

Fusel oil itself is used as a high boiling point solvent, for example, in the lacquer industry, or in petroleum-based fuels and pesticides. However, in most applications, fusel oil is not utilised in its initial form, but rather distilled into its various alcohols, which are then used separately.

For example, fusel oil's isoamyl alcohol has an attractive banana odour, hence its common application as a solvent in fruit flavouring. It is also widely used to give a pleasant scent to all sorts of non-food products, from perfumes to polishes.
